Christmas Pudding Traditions! Stir up Sunday...

This is traditionally the day in which families gather to stir, and steam, the Christmas pudding. A little ahead of the game, we've already gathered as a family at LHC HQ around a very sticky table, to collectively execute a much treasured family recipe: our founder Steve's grandmother's pudding. It's not something we can imagine festivities without, so this year we're sharing the recipe with you. We can promise you, it's a keeper.

    HANDMADE POTS FOR HANDMADE HONEY

We believe honey has a place on every table, which is why we reached out to St Ives ceramicist Kat Wheeler several years back with our vision for a ceramic honeypot. The idea was for a product true to our values of small-batch and  handmade, which would provide a 'home' for a favourite jar of honey.

    Introducing... EXTRAORDINARY BORAGE

Introducing our new short film: EXTRAORDINARY BORAGE

To whet your appetite for the film, we sat down for a quick chat with Beekeeper George, Steve's nephew, and the brains behind our CBD development process. You'll also meet George in the film, discussing what it means to be a bee farmer and what is so special to him about borage.

Honey & Berry Baked Cheescake Tarts

As beekeepers, it's no secret that a mug of well-placed tea has kept us going in some very early hours on a Yorkshire moor, or with a van full of hives on an interminable stretch of night road. So we're delighted to collaborate with specialist tea producers Camellia's Tea House on a new recipe series. Whether its peppermint, green or black, adding a spoon of honey not only provides a daily dose of antimicrobials but points up the flavour of the tea (and with none of the white sugar guilt…)

Fresh Clams in Rum Butter with Cinnamon Honey

Our Travels in Honey continues and this week our guest chef Emily is reminded of the taste of kithul (palm sugar) mixed with jaggery, in our acacia honey infused with whole cinnamon quill. Infusing cinnamon in honey takes it in the...

Lamb curry ‘shepherds pie’ & Isle of Purbeck

This Travels in Honey recipe includes two options in one; a curry and a potato-topped pie, and also finds a thread between a British classic and classic Sri Lankan flavours. Honey is the balancing factor here, a touch of unrefined sweetness which highlights the umami and savoury notes by virtue of being different. A delicious Spring recipe... lamb is in season and pairs so well with spices and sweet potato.

Travels in Honey: Slow cooked Chicken with Mango

Our Travels in Honey continues with Slow cooked Chicken with Mango. A recipe that operates on the same delicious premise say that lamb and apricots do, or sausages and apples, beef and quince. All of these are marriages of sweet and savoury brought together in a truly melting texture that binds the distinct flavours together.

Same for chicken and mango, here, the Ginger and Turmeric Honey not only helps render the juices particularly syrupy (just the kind to mop up with some bread) but draws out the rich amber hues of the dish.

  • Persimmon Pickle with Salisbury honey

Travels in Honey: Persimmon Pickle with Salisbury Honey

This recipe is a showcase in the beauty of natural sugar. Persimmons are naturally sweet and so this pickle only needs a few spoonfuls of our Salisbury honey to help it along and no refined sugars in the mix at all! The fruits are high in essential potassium and beta carotene, and antioxidants that help support keen vision and mental agility so, when put together with honey’s magical properties, we say keep a jar in the fridge and serve it up alongside plain rice, alongside cheeses, as a dip whenever you’re needing a healthy boost.

TRAVELS IN HONEY: Greens 'Gomaae' with Borage Honey

Our series ‘Travels with Honey’ continues, showing honey’s versatility across a spectrum of cultures and cuisines. This weeks recipe shows how to shake up our winter greens using our delicate Borage Honey in a recipe with origins in the Japanese side-dish ‘goma-ae’ which means simply ‘sesame sauce’.

Steamed Ginger & Honey Caramel Sponge Pudding

Christmas is fast approaching, but there is still time to whip up a spicy alternative to the traditional pudding with our steamed ginger and honey take. Somewhat lighter, but with all the zing of ginger to re-awaken any tired festive period taste...
